Does anyone have an easy, authentic Mexican food recipe that they would be willing to share?

My son is a college freshman and is attempting to get some extra credit in Spanish. He can add 2 % to his grade if he makes and brings in something authentically Mexican. Translation help would also be appreciated. Thanks!
